Nowadays a case is being made for jaggery as the superior choice compared to sugar. Because it has more 'minerals'. The presence of more minerals does not make a food a better choice.
Ayurveda clearly considers sugar as the superior choice, and that is what is also 'nityam'. or advised for regular usage.
Regular use of jaggery can cause many problems, including worms and blood disorders.
This is from Ashtanga Hrudaya, and the verses in Charaka and Shushruta are similar. These three are the Brihad Trayi, the cornerstone of ayurveda.
The four stages of processing of sugarcane are ddressed, and sita or sarkara is the most refined form, and that is what is considered the most superior, and is advised for daily used. It would be like boora cheeni, and not the industrial sulpher based processed sugar.
